Kangaroo Island Marron - Farm Fresh

 

 

Grilled Marron with Chilli and Cheese

Ingredients
200 g raw Marron (shell on)
2 small red onions, peeled & finely sliced
2 cloves garlic, peeled & crushed
2 fresh red chillies, deseeded & finely chopped
2 tbsp olive oil
250 ml double cream
100 g cheese, grated
juice 1 lime
few drops of Tabasco
salt & pepper
2-4 gratin dishes, buttered

Directions
Peel & devein the marron.
Place in a bowl and sprinkle with lime juice & Tabasco. Toss then leave to marinate for about 15 mins.
Meanwhile heat the oil in a frying pan and lightly cook the onions for about 3 mins.
Add the garlic and chillies and cook for 2-3 mins more. Divide between the four dishes.
Drain the marron and divide between the dishes.
Season with salt and pepper.
Pour over the cream and scatter the cheese over the top.
Preheat grill to very hot.
Put the dishes on a baking tray under the grill about 10cm down for about 5-6 mins until the marron turn pink and the cheese is golden and bubbly.
